Banslug makes kale chips.  I don't know exactly how but she loves them.  Allrecipes.com has the recipe.  I pre-cut my spaghetti squash into quarters & seed it & store in a bag.  The Ziploc fresh produce bags (don't remember what they're called) are really good at keeping stuff fresh.  When I need it, I steam the spag squash in those Zip n Steam bags or you can bake them in the oven.  Bok choy says stir fry to me  I had a good eggplant recipe, if I come back to this thread I'll try to locate the one I liked.  It was either food.com or allrecipes.com called eggplant lover's stuffed eggplant with ground turkey.

The squash is pretty good. The rest of your veggies... not so much.

I'm more of a broccoli, asparagus, Brussel sprout kind of guy.

My only eggplant recipe: Slice the egglplant long ways into thin slices. Paint on some EVOO. Sprinkle on some chopped garlic and grill.

Jeanne, I love when you call me 'banslug'!  

Kale Chips.....I just cut out the thick vein and cut or tear the leaves into smaller chip-size pieces.  Put them on a baking sheet and spritz with cooking spray (or you can toss them with EVOO, but I don't want mine coated TOO much in oil), and sprinkle with sea salt and/or any other spices you like (sometimes I like smoked paprika, other times I use seasoned salt) and then bake in the oven at about 325 for 8-10 minutes (longer if needed).  Watch them after that 8-10 min mark because they'll burn very quickly.  Cool on the pan.  LOVE them....might not sound very yummy, but try it once, I was surprised too.

Those Kale Chips are Awesome, I eat them and 2 of my kids like them too.

Also look up recipes for roasted veggies on Allrecipes, I've roast most of my veggies, like the taste better.

We LOVE spaghetti squash at my house. Just had it last night.

I just cut it in half and remove seeds with a large spoon. Place squash halves cut side down in a casserole dish with about 1/4 in. water. Cover with Saran Wrap Premium (safe to microwave brand). Nuke for 8-10 minutes depending on size of squash.

In skillet on stove, brown 1 package extra lean ground turkey breast with diced green peppers, onions & mushrooms. Add 1 jar low carb/low sugar marinara like Classico or Barilla or use tomato paste w/water to make sauce and heat through.

Remove squash with fork onto plate (should be tender/al dente texture if it's done) and top with sauce & parmesan. One of my favorites! You'll have leftover sauce, which you can use plenty of ways for a few more meals.

Love bok choy for stir fry's too.
